Tofu, and other pressing issues…

Get a TOFU PRESS!

Ok, now that we’ve gotten that out of the way, let’s continue. Tofu is wonderful. But more often than not, we aren’t whipping it up into a fantastic chocolate mousse or cream pie, we’re trying to get it to feel like some sort of meaty-ness thing. It doesn’t work, but still we try… We try and try.

Here are a few quick and simple tips I’d like to present for your perusal.

  • GET A TOFU PRESS. This is the one I got when a friend thought “What should I buy my vegan friend who thinks he has everything?” Somehow I had gone my entire 5 years without a proper press. I was still using towels and plates, and sometimes there were accidents… and often than not, it didn’t do a great job. so GET A PRESS!

  • For a really meaty texture, you gotta freeze the tofu. Not once, but twice. Freeze it, thaw it, freeze it, thaw it, press it, and voila. The freezing helps create some big air pockets and changes the texture of the tofu brick.

  • Dust it in your choice of chickpea flour, corn starch, or potato starch. I find I prefer to use the potato starch if I’m making a sticky orange chicken type dish. The other two just help crisp it up and are better for making salad toppings and nuggets.

  • Extra Firm, almost always. Again, unless the recipe calls for silken, don’t buy it. You can kinda make Firm tofu into Extra Firm if you just really really PRESS THAT TOFU!

  • Tofu can easily turn into scrambled eggs. But you’ll need to get some Kala Namak first. Once you’ve got that, follow this recipe from Rainbow Plant Life:

  • Make sure that you are grabbing NON GMO Organic Tofu. This accounts for a fraction of a percent of the total soybean production in the US. When people complain about Soy Boys being responsible for all of the dead zones in the Gulf, just know that it’s REALLY all coming from the non-organic over farming of soy and other crops like alfalfa, most of which is shipped to China as animal feed and to South Korea as Soybean Oil. We are poisoning our water and land to make soy for other countries. It AIN’T US SOY BOYS! Rest assured…
